I might be a little obsessed with soup, pumpkin, and peppermint. Okay, okay, I've been a little obsessed with soup, and if you've been on the site at all in the last few months you will believe this. Our family LOVES soup, so it's something we often make and something we can't fulfill when it's cold. One thing we like to make it perfect with our soup is cornbread. Easy and fast and delicious side dishes to eat. We usually only make the type right out of the box, but about two years ago we were introduced to the Sweet Corn Bread version by one of my husband's students, Bill.

Bill made this cornbread for the Christmas party which was for all teaching staff and staff. My husband first tried bread and said I had to try it. I did and realized it was the best cornbread I have ever tried !! It's sweet, moist and soft! Since then, Bill took him to various school parties, and that is a recipe we always enjoy. It wasn't until a few months ago when we had cornbread again that I finally asked for a recipe. It came from family friend Bill's mother, and I knew I had to make it for the site. Since that incident, we feel we have made it at least 3 to 4 times. There is actually no secret ingredient, but I think it is sugar and sour cream which makes it very delicious. 😉


  • 14.75 ounces of creamed corn
  • 1 small Jiffy Corn mixture
  • 1 cup of sour cream
  • 1/4 cup of oil
  • 1/4 cup sugar
  • 2 eggs


  1. Preheat the oven to 350.
  2. Then mix all the ingredients with a large bowl and stir well.
  3. Pour into greased 9x13 pan.
  4. Bake for 35-40 minutes.
